Planning kitchen drainage

  • Under and near equipment: place drains near dishwashers, combi ovens, kettles, tilting pans and sinks, where water collects.
  • In wash-down areas: use a linear channel or several drains so water does not pool.
  • Walk-in coolers: fit a drain outside the cooler door, not inside.
  • Falls: lay the whole floor to fall towards the drains.
