How the size is worked out

The guide uses the meals-per-hour method: the number of meals in your busiest hour, multiplied by the waste water per meal, the time the water should stay in the trap so grease can separate, and a storage factor for how many hours the kitchen runs each day.

  • Waste water per meal: higher with a dishwasher, lower for takeaway and single-use plates, and higher again with a food waste disposer
  • Retention time: longer for full kitchens, shorter for takeaway
  • Storage factor: kitchens that run longer hours need more storage between cleanings

Which grease trap type?

Small kitchens and pantries usually use a compact above-ground grease trap under or next to the sink. Restaurants and hotel kitchens often need a larger PVC grease trap (Type A, B or C) made to size, and big kitchens, food courts and central kitchens usually need a large unit outside the building. Compare materials in our guide to PVC, stainless steel and concrete grease traps.

Keep it maintained

A grease trap only works if it is emptied regularly. Read how often to clean a grease trap and see our full range of grease traps.

Frequently asked questions

Is this the official Dubai Municipality size?
No. It is a rough estimate. The final size must follow Dubai Municipality or your local authority requirements and your consultant’s design.
What does meals in the busiest hour mean?
The number of meals your kitchen prepares in its busiest hour, for example the lunch or dinner peak.
Why does a dishwasher make the grease trap bigger?
Dishwashers send more hot water to the drain per meal, so the trap needs more volume to slow the water down and let grease separate.
What size grease trap does a small café need?
Small cafés and pantries often only need a compact under-sink or above-ground grease trap. Use the calculator, then send us your details to confirm.
Can you make a grease trap to my size?
Yes. Our PVC grease traps (Type A, B and C) can be made to your size and inlet and outlet positions.
